Eating well on a budget

Chicken Teriyaki is one of our favorites

I was a working single mom… Well, sometimes I wasn’t working and we were on food stamps (now SNAP).

Even so, we always ate well. I would even have money left over from the monthly SNAP allowance. I personally don’t understand why its not enough for most people.

Some of the reasons might be –

I didn’t buy much in the way of ice cream, cakes, cookies, chips, or pop.

I can make one chicken breast feed 2 or 3 people.

I had my meatless spaghetti or fake baked mostaccioli that we ate quite a bit.

If we did get a rotisserie chicken, it fed us twice and then I made chicken soup.

If I made a ham for a holiday dinner, I would use the bone to make split pea soup.

I bought a variety of foods that could be put together in different combinations. I am a little ADHD.

Even to this day, my main shopping list remains pretty much the same –

  • Chicken
  • Pork chops
  • Ground beef
  • Lettuce
  • Tomato
  • Broccoli
  • Onions
  • Cheeses
  • Eggs
  • Butter
  • Tuna
  • Beans
  • Pasta
  • Canned petite diced tomatoes
  • Breads and rolls
  • Peanut butter
  • Pure maple syrup
  • Basic baking stuff – flour, sugar, brown sugar, baking powder, baking soda, pure vanilla extract, chocolate chips, powdered sugar…
  • Jiffy devil’s food cake mix
  • Condiments – bbq sauce, ketchup, mustard, pickles, mayo, salad dressings, etc.

I’ll keep things like a bag of fries, or breakfast sausage in the freezer.

Many times I don’t need to buy all of this every week. These are the things I always want to keep on hand. I keep kaiser rolls in the freezer. I cut french bread into meal sized portions and freeze.

Then from there, I would add fruit and maybe green peppers or some other vegetables. Sometimes steak. Sometimes potatoes, or sweet potatoes.

I’ll bet the cake mix raised a few eyebrows. It made a quick little dessert. We ate it with no frosting. It was just enough to satisfy a sweet tooth. Just a once in a while thing, but good to have on hand.

Yesterday I was running errands with a friend. We stopped at Wendy’s. My burger, fries and Frosty were over $9. (Hey, if I’m going to do it, might as well go all out…) For that money I could put out steak, baked potato, and steamed broccoli for 2.

Eating fresh food tastes better, will keep you thin, healthy, and full of energy, and costs less.

I’ve often said that if you eat the way I do that its impossible to gain weight. And I sure don’t eat like a bird!
